Chocolate Date Cookies

So here’s the birthday recipe I promised you! I hope you love my creation just as much as my family and I love it!

These are so, so delicious! I make them every second day because me, my mum, dad and brother eat these Chocolate Date Cookies very fast. We all try to eat them slowly but we can’t! I made them yesterday and have one cookie leftover…..make that half a cookie…….

MAKES: about 20 cookies (or depending on size)  TIME: 25 minutes prep time + 10-15 minutes cooking time + cooling time

INGREDIENTS:

  • 1 1/3 cup medjool dates, pitted, firmly packed
  • 2 tsp vanilla essence
  • 2 cups almond flour
  • 2 tbsp cacao powder
  • 1/2 cup coconut oil
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs

METHOD:

Pre-heat an oven to 160Β°C and line trays with parchment paper.                                                                                                                Place dates and vanilla essence in blender or food processor and blend well until a thick paste. Add the rest of ingredients to vanilla date paste in blender or food processor. Blend well until well combined and smooth with no lumps. Dampen hands with a little bit of water and scoop an oversized tablespoon of cookie mixture into hand. Roll mixture into a ball and place on trays. Use damp fingers or damp spoon to press cookies down slightly. Put cookies in an oven for 10-15 minutes or until slightly brown on edges. Once cooked, cool for 15 minutes or until firm. Store these very delicious cookies in an airtight container. Enjoy!
